Meatless Monday: After a weekend in nature

It’s been a few weeks since we’ve done a Meatless Monday, but I’ve come across a new recipe I wanted to share. We’re also sneaking up on a Veggie of the Month post for November, so stay tuned for that too. As many of you know, my giveaway is still kickin.
